(15 ml) grated onion 2 tbsp. (25 ml) chopped parsley 1 tbsp. (15 mi) lemon juice ¥, tsp. (2 ml) anchovy paste (op- tionad) Y% tsp. (1 ml) pepper 1 tsp. (5 ml) Worcestershire sauce Drain salmon, reserving juices for later use in fish stocks, sauces, etc. Flake salmon into a bowl along with well-mashed bones. Blend in cheeses and seasonings until smooth. Mold in small bowl lined with plastic wrap. Chill several hours. Unmold to serve, garnishing with sprigs of parsley. Makes about 2 cups (500 ml). Salmon & Caper Stuffing Stuff into vegetables such as mushroom caps, cherry tomatoes, or snow peas. (5 ml) lemon juice 2 tbsp. (25 ml) chopped fresh parsley dask Tabesco In a small bowl, flake salmon along with juices and well-mashed bones. Add capers, celery, sour cream, lemon juice and parsley; mix well to combine ingredients evenly. Add Tabasco to taste. Makes about 114 cups (300 mi). (25 ml) mayonnaise 1 bsp. (15 ral) lemon juice 1% cups (375 m\) soft fresh bread crumbs Ltsp. (5 ml) Dijon mustard Ys cup (75 mil) minced green onions 1 egg, beaten % tsp. (1 mi) thyme, dried Salt and freshly ground pepper 1% cups (375 ml) pimento stuffed small olives, about 60 % cup (150 mi) sesame seeds, toasted In a mixing bowl, flake salmon along with juices and well-mashed bones. Add mayonnaise, lemon juice, bread crumbs, mustard and green onions; mix with a fork until well blended. Add egg, thyme, salt and pepper to taste. Roll balls in sesame seeds to coat. Place on greased baking sheet; bake in 350°F (180°C) oven for 10 minutes or until firm. Serve warm. Makes about 60 balls. May be prepared in advance and baked just before serving. (Option: instead of using whole olives, % cup (125 ml) chopped olives may be added to salmon mixture. Makes 30 one-inch (2.5 cm) balls.) Cheesey Salmon Zucchini Squares Zucchini, layered between a base of well-seasoned salmon and a topping of cheddar cheese, is the surprise element in these hot * delights. 1 can (7% 02./213 g) Pacific sslmon 1 medium onion, minced 1 large clove garlic, minced 4 eggs, well beaten Y% cup (50 mi) fine fresh bread crumbs 2 tbsp. (25 ml) chopped fresh dill (or 1 tsp./5 ml dried) 2 tbsp. (25 ml) chopped fresh parsley Y tsp. (1 ml) salt dash Tabasco freshly ground pepper 2 cups (500 ml) grated cheddar cheese 1 small zucchini 1 tbsp. (15 ml) grated ‘Parmesan cheese In a mixing bowl flake saimon along with juice and well-mashed bones. Stir in onion, garlic, eggs, bread crumbs, dill, parsley, salt, Tabasco and pepper to taste. Add 1% cups (375 ml) of the cheddar cheese. Spoon into a well-buttered 9- inch (23 cm) baking dish. Slice zucchini into rounds and arrange in a single layer on top. Sprinkle with remaining % cup (125 ml) cheddar cheese and the Parmesan cheese. Bake in 325°F (160°C) oven 40 minutes or until set.
