SO YOU'VE just been
laid off, your mortgage
payment is due in two
days, the credit card
company is demanding
you actually pay for all
those Christmas
presents you bought so
easily with a wave of
the plastic last month,
and your car’s been
towed away by the
police. What do you do
now?

You drown your sorrows,

- -that's-what.

“At the price of liquor
today?” you retort. “Why.
rd have to sell one of the
kids to afford even a case of
beer... hmm...”. New,
before you do anything
hasty, there is a less drastic
solution, namely making
your own alcohol.

Operating your own
distillery is still illegal in this
unenlightened country, at
least as far as I know, but
you are allowed to make
your own wine and beer, as
well as other fermented
beverages, such as cider. I'll
deal with the intricacies and
joys of making wine in
another article, but here |
shall demystify the simple art
of making beer.

brewmasters mixed arcane
ingredients while mumbling
incantations, or you might

surrounded by test tubes,
cous, and computers.

But beer making doesn't
have to be like that. In its
relentless search for new
fields to conquer, modern
science has invented instant
beer!

Well, not quite instant. It
will still take at least a month
to produce a_i drinkable
potion, but home beer
making has become almost

idiot-proof. Take it from an

. Yes, even 1, a walking
disaster area when it comes
to anything more complicated
than opening a bottle, was
able to produce a drinkable
beer in just over 4 month,
and all for an initial capital
investment of less than $30,
and $10 for the raw beer-
making matenials.

Ten dollars worth of raw
ingredients turned into 36
bottles of beer. Tell me
where else you can get 36
bottles of beer for $10 in this
province.

LABOR OF LOVE

But beer-making 1s not
something to be done merely

for economic reasons. It’s a
fascinating process, a richly
rewarding labor of love, and
a great way to impress your
friends.

There are two ways to
brew beer. One is to buy the
ingredients, such as hops,
mait and brewer's yeast,
separately. They can all be
found at any wine supply
Store. But even easier is to
buy everything in one
package -- malt, hops, etc. in
a can, with the yeast in a
package taped to the top,
and instructions on the side
of the can.

The cans are also available
at wine hobby stores, but
can also be found at some
drugstores. as my heer-
making partner and I found
out.

I would recommend a kit
to the beginner. After a few
batches you can try malt and
hops, experiment with
different recipes and _ be
adventurous.

I'm not going to describe
the exact beer-making
process here, I'll simply give
a rough indication of what is
involved, and then, if you're
still interested, it would be a
good idea to see what
maternal your local library
