We've all shied away from butter in the fast years, partly because of price, partly because of scare stories about our beleaguered arteries, partly because an alternative existed. But margarine, though it tried hard, and duplicated flavor and color very suc- cessfully, never mastered tex- ture, and betrayed its presence with that pastiness that clung to the tongue. Those who sajd they couldn’t tell the difference were just lucky, because for the rest of us there was no acceptable substitute. Now there is a new margarine, called ‘‘Krona’’, .... that claims to be the first ge- nuine butter equivalent. I was offered a trial pound, as well as some information on the product and some suggested © recipes for its use. I tried one of the recipes, for a dessert pastry, but F have my own tests, two of which I have had a chance to subject it to, and I have to tell you, it ‘‘passed’’ both occasions. These things, for me, must be made with, or served with, butter. One is scrambled eggs, one is shortbread, another is as an accompani- ment to hot breads or freshly cooked vegetables. You have Sauces to dip fondue SESAME SEED SAUCE: Combine % cup (160mL) soya sauce, 2 tablespoons GOmL) lemon juice and 2 tablespoons (30mL) toasted sesame seeds. CURRY SAUCE: Combine “% cup (125mL) mayonnaise, “% cup (50mL) sour cream, | tsp (SmL) curry powder and 2 tsp (10mL) tar- ragon vinegar. PLUM SAUCE: Combine 1/4 tsp (7mL) dry mustard, 1 tbsp (15mL) cooking oil, “tsp (imL) garlic, 2 tsp (1OmL) vinegar and “% cup (i25mL) plum jam. Into a bowl, the eggs you plan to scramble, plus 1 Tbspn. of whipping cream for each egg a dash of Tabasco, salt and pepper pepper’s nice) and, if you feel like it 2-3 tender chives, chopped very fine When the butter is melted, and the stage set, turn the heat to high, pour in the egg mixture, and with a spatula begin to stir. Move the egg constantly from the bottom, (lemon ‘and as soon as any coagula- tion shows, begin to reduce the heat as you continue to stir. Presently it will become a soft, glistening, perfect mass, buttery and irresistible. On to the warm plates, and that’s what heaven’s like. Their pastry product turn- ed out a bit crisp, but with a pleasant flavor, and_ will make 16-18 tart shells or enough roiled out for one flan or one quiche. Success duplicated, we in British Col- umbia are the third targets, and are expected to react just as enthusiastically. We pro- bably will, since it is just two- thirds the price of butter, which they say clogs up our arteries. But what will Krona do?
