Her adoptive parents, Chuck and Melody Berkowski, first saw her picture through the ministry bulletin. They were referred to the pro- ject, and over the course of the pre-placement process met with all her daycare workers, physicians, foster parents and anyone else who had been involved in Chantelle’s life. After gradually visiting Chantelle, and once Chantelle started feeling attached to them, the Berkowskis took her home. Once home, both the ministry social worker and project worker continued to be involved with Chantelle and her new family. Meloay says the project counsellor visited about once a week for a year afterward. Of the 366 adoptions that took place last year in B.C., 115 were special-needs ministry placements. Unfortunately, there are not as many families available as there are children that need placement. Says Delma Hemming, manager of Adoption Programs for the Province of B.C., ‘‘It is difficult to find homes for special-needs children. We need a wide range of homes to find a match for a par- ticuiar child’s personality, behavioral needs and physical care.”’ There may, however, soon be one more suitable home for a waiting child. Melody Berkowski says, ‘‘They (the Special-Needs Adoption Demonstration Project) were just a phone call away. They were always there if we needed them. It was so good, we’re thinking of adopting another child.” The funding for the Special- Needs Adoption Demonstration Project expires March 31, 1992. it is run by North Shore Family Services Society, a non-profit United Way member agency dedicated to strengthening and enriching family life on the North Shore. Cover and simmer very gently for 45 minutes, keeping ths temperature very low or the pep- pers will break. Move the peppers about the pot a few times during cooking to prevent sticking. After 45 minutes pour the paprika gravy over the peppers, cover and simmer for 20 minutes more. PAN-FRIED PORK STEAK (Serves 4-6) When I had this dish in Budapest I was surprised at the bright flavor. The Hungarians love pork and this treatment is just wonderful. 4% pounds pork steaks, deboned 1% tablespoons celery seeds .Leup all-parpose fionr . Salt and feshly ground black pep- per to taste 4 tablespoons freshly -rendered lard or peanut oil 1% cups paprika gravy (recipe above) Debone the pork steaks and pound them out to. %-inch thickness. Rub both sides of the steak with the celery seeds. Place the flour in a large bowl and season with salt and pepper. Dredge the pork in the seasoned flour and pan-fry in lard or pea- nut oil over medium heat until golden brown on both sides. Serve with paprika gravy. HUNGARIAN STUFFED CAB- BAGE ROLLS (Serves 8) Everyone in Eastern Europe seems to have enjoyed these. 2 tablespoons freshly rendered iasd or oil 3 cloves garlic, peeled and crushed 1 medium yellow onion, finely chopped 1 cup seeded and finely chopped Anaheim green peppers or chop- ped but not seeded Cubanelie peppers % cup long-grain rice 2% caps chicken stock, fresh or canned 1 tablespoon Hungarian paprika Salt and freshly ground black pepper to taste 1 large head green cabbage 1 24-ounce jar saverkiaut (about 3 cups), drained | 1 pound finely ground pork | C28 2 Ib. smoked pork butt, sliced GARNISH paprika gravy (recipe above) Saute the garlic, onion and peppers in the lard or oil until tender. Add the rice, I cup vf the chicken stock, the paprika and salt and pepper. Cover and sim- mer for 10 minutes. Set aside and allow to cool. Core the cabbage and carefully puil the leaves off, keeping them as whole as possible. Blanch the leaves in a large pot ‘of salted water until pliable, about 2 minutes; drain and allow to cool. This should be done in a couple of batches. Cut out the tough white base of each leaf. In a Dutch oven spread 2 cups of the drained sauerkraut in the bottom of the pot; set aside. In a large bowl combine the ground pork and the cooled rice mixture, egg, salt and pepper. Mix very well. Spread out a cabbage leaf on the counter top and roil up into a cylinder, folding in the sides as you roll. Continue with the rest of ‘the leaves; it may be necessary to Piece together a couple of leaves to make a nice roll. Arrange the rolls on the bed of sauerkraut in the pot. Place the pork slices on top of the rolls and spread the remaining 1 cup of sauerkraut over all. - Pour in the remaining 14 cups of chicken stock; it should just cover the cabbage rolls. If not, add more stock. Bring to a simmer and cook for 1 hour and 15 minutes. This dish can be served with paprika gravy (recipe above).
