Bring to a boil and transfer to a large, greased or sprayed casserole dish. Cover and bake at 375° for half an hour. Uncover, top with a cup of grated cheddar and bake another 15 minutes. This serves 6 generously. Team it with garlic bread and a dark-green salad, featuring spinach or romaine. IGA is featuring chicken this week. Utility fryers are fresh so you can stock your freezer (99¢ a pound). If you’ve got time, chop a few up into parts. If not, drum- sticks ($1.69) and_ thighs ($1.79) in approx. 3-Ib. bags, already frozen might be a better choice. For each serving, allow one under-ripe banana, split in half lengthwise, 1 tablespoon butter, 1 tablespoon brown sugar and two tablespoons (who measures?) brandy or liqueur. I’ve used cointreau, Glayva, Triple Sec - whatever we've got the most of. Melt the butter and stir in the sugar. Cook the bananas gently in the mixture.
