will be doing just what I’m doing — trying to cut

food bills.

this week and if you happen

this for a meatless meal.

This recipe feeds four and is
the right size for my 12”
skillet.

Puffy Baked Omelette
6 eggs, separated
6 tablespoons water
1 teaspoon salt

Set your oven at 350°F.
Beat egg whites until stiff
not dry. Beat yolks with
water and salt until thick
and lemon colored. Gently
fold yolks into whites with a
Spatula.

Pour mixture into a greas-
ed skillet and cook on top of
the stove until bottom
browns — about five
minutes on medium heat.
Place in the oven and bake
until the top is brown and
firm, 15-20 minutes.

Serve with any of your
favorite sauces - cheese sauce
is excellent — or try this
one: ;

Fu Yung Sauce

1 cup beansprouts

Y% cup shredded onion

Ya cup finely sliced celery

4 teaspoons cornstarch

In a very little oil, stir-fry
the vegetables until crisp-
tender. Combine the remain-
ing ingredients and add to
vegetables, stirring until
sauce thickens.

This is a very thick sauce
and if you like, increase the
liquids proportionately and
you'll have more juice to
pour over.
