Lighter than Greece’s rice, potato and lamb-heavy dishes, the food of Lebanon combines European, Arabian and orien- tal influences. It’s also very much a communal cuisine of hors d’oeuvres that makes for an interesting meal of shared dishes and social intercourse. ’ The use of sesame and olive oil, bulgur (cracked wheat), lemon, parsley, cilantro, mint, lentils, chick peas, falofel, eggplant and chicken predominates. But Lebanese dishes ranges far and wide. The more exotic include such ingredients as lambs’ tongues, spinal marrow and brains. . But Farrage’s 20-seat Byblos, which has been open since mid-September, sticks to the basics.
