And Lassaga’s departure will be missed, but Chez Michel owner Michel Segur kas filled the post with brother Philippe, thereby maintaining both culinary and familial continuity without bobbd!l- ing an entree. Chez Michel has a warmth and an assured professionalism to which many restaurants aspire but which few achieve. Its atmosphere never over- whelms or commands attention. Rather, it presents something in- definably familiar and congenial. It is an aid to digestion and food ap- preciation, not an adjunct or hin- drance. Segur is the master soft-spoken host for the restaurant that bears his name. And his head waiter, Christian Denaire, remains the fas- tidious and efficient service kingpin of the restaurant's intimate front end, providing the polish that has helped the restaurant to shine so brightly for so many years. The restaurant’s menu continues the offer an appealing slice of pro- vincial French cookery that re- mains at once sophisticated and appetizing.
