Remove the bones and cut
away as much fat as you
can.

I use a smal! crock with a
lid to cure the beef but any
glass bowl with a cover will
do. Don’t use metal. To
hold the beef under the
Pickling liquid, try a glass
plate weighed down with a
well-scrubbed rock wrapped
in. several layers of plastic

wrap.

Saltpetre is available in
drug stores.

‘Corned Beef
10 pounds beef chuck,
bones removed

Y; cup brown sugar -

Lcup salt © ,

4 teaspoon dry mustard

‘Y: teaspoon powdered ginger
2 tablespoons paprika

1- tablespoon’ mixed | pick!-
ing spice

1 bay leaf, crumbled '
8 peppercorns.
4 cloves garlic, crushed

. ¥2 teaspoon saltpetre
_ ¥4 cup water.

Mix together the sugar,

salt. and all the spices in-
cluding the garlic. Rub
thoroughly into the meat.
Place meat in a glass con-
tainer,”. Mix saltpetre -in’ %.

Scald the plate and re-wrap
the weight in fiesh plastic
wrap. Keep the meat
refrigerated.

To cook: Drain off pickl-
ing liquid. Place meat in a
deep pot with a lid and add
water to cover. Add:

1 tablespoon brown sugar
1 chopped onion

Simmer several hours or un-
til very tender. Serve hot or
well chilled and thinly sliced.

I have frozen the uncook-
ed corned beef but not for
more than a couple of weeks
- spices tend to change flavor
when frozen.
