LIVING WITH METRIC

Divide and conquer!

HOW ARE YOU making out in the metric
market, men? This is a time when it pays to be
new on the cookery scene, without any long-
standing, built-in, second-nature friendship with
traditional pounds and ounces.

It still brings beads of cold
sweat to my forehead to
encounter a big bold sign
“$6.95” over the steak
section. Or “1.19” hanging
over the broccoli. The little
“kg” finally filters through,
and I start dividing, by 2.2. If
this was supposed to be so
painless, how come all those
decimal points?

The bottom line, as they
say down on Howe Street, is
that you still buy the piece or
the bunch or the number
that you need, and you pay
for it. Might as well be in
Urdu.

you on this metric thing, .

though, and would be
grateful for your views. You
see, I'm getting this book
ready for publication, about

cookery easy, interesting
and amusing, a lot of it stuff
from this column, of course,
but also lots of other
material.

Up to now, I’ve used the
same pattern that I use in
this space, what you might
call ‘‘conversational
cooking”, with the metric
and Imperial measures in
tandem. -So it ‘comes out,
“Blend 2 Tospn. (30 mL) of
flour into 2 Tbspn. (30mL) of
soft butter” and blah-blah-
blah.

But some of the sources
that come my way have
adopted the two paratiel
lines of ingredients, as:

30 mL
30 mL

and so on. Now this saves a
heckuva lot of brackets, but

2 Todspns. flour
2 Tbspns. butter

it also means an almost total
disassociation of the sense or
connection between the two
equivalents, and that means
you'll never learn.

format. You always say

crumbs 310mL
'A c. melted butter 60mL
1 8-oz pkg. Philadelphia

cream cheese 2272
“a c. white sugar 125mL
‘4 Tobspn. lemon juice 8mL
I tsp. vanilla -SmL
dash of salt - dash
1 c. sour cream 250mL
2 Tospns. sugar 30mL
dash of vanilla dash

Mix the crumbs and

melted butter and press into
a pie plate (1 use a quiche
dish.)

Beat the cream cheese
with a cup of sugar with an
electric beater until very
smooth.

Beat in lemon juice and
vanilla. (I added the grated
yellow only rind of } lemon,
it’s called “the zest”.)

Add salt, beat in eggs one
at a time, and spoon it all
into the prepared “crust”.

Bake until set, roughly 25-
30 minutes. You can test by
tapping the edge of the plate
— if it’s done the centre

Remove from the oven
long enough to spoon over
the hot cake the sour cream
into which is mixed the 2
Tbspns. sugar. Dash in the
vanilla and return to the
oven for 10 minutes only.
Chill it thoroughly before
serving .

when it comes as a story, you
have to read all the way
through to find out what the
ingredients are. Should I
rather do in the style of the
following recipe for “Caryn’s
Cheesecake”.

Acorn squash 1s a year
round favorite, but
especially good in cooler
weather Here's a wonderful
vanauion on the squash
theme. Hatve an acorn
squash, remove seeds, bake
at 350° F 30 minutes, cut side

down. ,

Fill each half with pine-
apple chunks and cooked
ham combined and sprinkled
with orcad crumbs. Cook
another 30 minutes. Presto!
