Mix crumbs with rum, melted butter or margarine, cocoa, icing sugar, chopped nuts and sait with fingers until mixture hoids shape easily. Form the chocolate mixture into balis the size of grapes. , ; - Cover the centre with crumb mixture * (size of wainuts). Dip in slightly beaten egg white and roll in chocolate sprinkles. Store in airtight container in fridge for at least 24 hours to mellow. *The easiest way of doing this is to flatten a small amount of the crumb mixture in your hand, scoop a round of chocolate out with a coffee spoon and press it into the centre of the mixture, then fold your hand around the mixture, pressing it lightly to form a ball. If the crumb mixture starts to dry out, place over hot water to moisten. You will probably have to wash your hands frequently. Makes 212 dozen. Recipe may be doubled. ; & dashsait .
