Repeat with the remaining vegetables, topping it all with the remaining cheese, and pouring the remaining garlic and olive vil evenly over it all. Place, uncovered, into oven for 40-50 minutes, or until the ies vegetables are tender when pierced with a skewer. Shred basil by stacking the leaves and slicing them thinly. Remove from oven and sprin- Kle shredded fresh basil over the top. Asparagus, other summer squashes and eggpiant are all good in this also.
