Try goose for Christmas change

AST WEEK I treated my family to roast
goose. Although I’d cooked geese for my
mother I hadn’t done one in years and my
family looked at the bird with the suspicion reserv-
ed for anything they haven’t had once a week since
infancy. When it comes to food they show a

singular lack of adventure.

The bird was about 10
pounds and needed five
hours of slow cooking (325°).
| pricked the skin all over and
during the roasting, drained
every bit of fat that = ac-
cumulated in the pan. | used
my turkey baster and it did a
great job. Take the bird out
of the oven and close the
door while you drain the pan.
If the element comes on for
any length of time the goose
spatters all over your oven.

Mix together and press into
