UMBERTINO’S represents Umberto Menghi’s bid to spread the simple joy of pasta to the fast-food masses. But the addition of blue collar to the silk white of Menghi’s top- end pastarias and Italian cuisine restaurants does not mean the pasta prince’s culinary sensibilities have been sacrificed to speed. Umbertino’s delivers food that is fast, but full-flavored. Pasta, afterall, has all the at- tributes of a great fast food — simplicity, flexibility, digestibifity and nutrition — without the artery-hardening properties — ex- cess fats, sugars and salts — of the more traditional fast foods. The menu, with all items available to eat-in, take-out or have delivered, features 16 pasta entrees, all under $5. There are also two soups ($1.50 each), a half dozen cold appetizers, from $2.25 for an Umbertino’s Salad to $4.25 for a Caesar for two and a pair of simple desserts ($2.25 each). The restaurant itself is sparsely decorated in Continental cafeteria fashion with cool blue and white tiles, simple wooden chairs and tables topped with blue arborite. Patrons place orders at one end of Umbertino’s counter and pick them up at the other. In between, food is prepared in full view of patrons by a revolving trio of young cooks. To test the workings of both ends of the restaurant’s eat-in, take-out operation, I selected a plate of Antipasto ($2.50) and a glass of red wine ($1.95) to eat on the premises and orders of Fusilli Quattro Formaggi ($4.25) and Farfalle Champignon ($3.95) and a Greek Platter for Two slice of Pizza Bread ($1.75) to take Greek Saiad, Calamari, Meatballs out. .
