he’s been yearning for a good-
old-fashioned feed of salt cod.

She asked the right person — |
grew up on the stuff and love it, In
fact, P'd sooner have it than steak
— but, just like liver ...

A pound of salt cod will feed
two ‘hugely’, three comfortably
and four adequately.

The first thing to do is get most
of the salt out of it, The fish you
see is not the fish you'll eat — salt
cod is a hard, greyish chunk with a
Strong smell — a mixture of
smoke, salt and fish.

To make it pliable, soak over-
night in a big bucket of water, giv-
ing it a poke or two every time you
go by.

Then, drain and simmer for h
alf an hour in fresh water. Taste it.
