And where better to raise a “flut-
ed glass and silver fork to B.C.’s
favorite fish than at the grand
Salmon House on the Hill, home of
the lead cheerleaders in what has

become an annual North Shore

‘salmon festival.

Last year the Salmon House
hosted the kick-off to salmon
month with a Sept. 27 sundeck
party that included the culinary
contributions of 10 other progres-
sive restaurants from around the | :
Lower Mainland.

Each set up a smal! outdoor
kitchen on the Salmon House's
sundeck and prepared delicious
variations on the salmon theme
such as Pepper-Seared Salmon
with Goat Cheese and Sun-Dried
Tomato Vinaigrette on Corn -_
Griddle Cakes.

All were excellent.

And while a couple of last
year's festival contnibutors did not
make it to the 1995 celebration.
