As oats have a higher’ fat con- tent than most other cereal grains (except corn), groats are some- times heated with steam for two to three minutes. This process deactivates the en- zyme lypase, which can cause the fat to spoil during storage. Groats may also be kiln-dried, which acts like a gentle roasting, to improve their flavor. The term ‘‘rolled oats’’ aptly describes the processing methods, for groats are softened by cook- ing, flattened by heavy rollers, -and then dried with cold air. Groats which have been cut into several pieces and rolled thinly are called quick oats, so named because they require less cooking. Cooking softens the cell walls of cereals to improve their digestibility. And it converts some of the starches to dextrins and sugar, improving flavor. Heat and water also swell the Starch grains, reducing the amount of free water, so the mixture thickens. Cooks who are hooked on por- tidge for breakfast recommend cooking it beyond the point of simply thickening. Constant stirring is not needed, as it only breaks the particles so they become gummy. Real porridge isn’t an instant breakfast. Some is even started the night before, by soaking, and then finished quickly in the morn- ‘ing. But its nutty flavor and welcoming aroma are worth the extra preparation time. Serve it with brown sugar and a puddle of cream, or raisins, or cooked apple and cinnamon. And as you start your day with a steaming bowl of warmth and comfort, don’t you sometimes wonder if those who say they don’t like porridge have never tasted the real McCoy?
