Do not defrost at room temperature because the outside layer will become warm (allowing for bacteria to multiply), while the inside stays cold. Hand washing is extremely important, and shuuld be done before and after han- dling poultry. Utensils must be clean, and cutting boards should be sanitized with hot soapy water and a small amount of chlorine bleach, Because they are easier to sanitize, plastic cutting boards are recommended.
