Chelois or a Verdelet? , The answer, of course, is neither, since no wine complements chocolate. But the real point of the question is to draw attention to the new and sometimes unfamiliar names which hdave begun to appear on British Columbia wine labels. , The names on wine labels fall into three groups. There are the generic labels....such names as Lake Country Red, Burgundy, Chablis, and so. on. Sauvigon Blanc: This is a striking wine, crisply dry but with good body and some- . ‘times with an almost smoky finish: In fact, the California wineries using these often use include the French word for smoky: fume. Chenin Blane: Soft and full bodied. ~ Riesling: The most widcly grown white grape in British Columbia is the Okanagan Riesling. The wines some- times have a hint of spiciness and pften enough acidity that the wines, for the sake of balance, are finished with a bit of sweetness. The acidity is natural, just as it is in a grapefruit or an apple, and is as essential to the flavour of a wine as salt is to cooking. The Johannisberg Ries- De Chaunac: Sometimes this one is called Seibel 9549. It produces a medium-bodied red which mellows consider- ably with age but which also can be aged so long that it will lose its character. The grape is named for the late Adelard de Chaunac, for many years technical director with Bright’s winery in Ontario. Marechal Foch: A_ brecder named Kuhlmann crossed two Burgundy _ varieties, Pinot Noir and Gamay, with a Native American strain to produce this hardy and heavy producer. A grape with a blood-red flesh, it can produce distinctive big-bod- ied wines with some aging potential.
