I’m content with the main event — just like I’d trash the tree on Boxing Day if my family would allow it. The only reasonable use I find for the leftover bird is making soup, and each year I’m amazed at how many calls I get from readers asking how it’s done. There are any number of ways but this is mine: Turkey Soup You’ll need a very farge kettle for this. 1 turkey carcass — remove most of the meat, dice and set aside water to cover — about 10 cups 4-5 bay leaves (count these and make sure you remove them entire- ly before serving. They can lodge in your throat.) 1 tablespoon poultry seasoning 2 tablespoons dry chicken broth mix 1 large onion, diced 3 large carrots, diced 1 medium turnip, peeled and diced (Feel free to add any other vegetables you like but I don’t recommend potatoes — they can go mushy.) 2 tablespoons Worcestershire sauce seasoning sait to taste — start with 1 tablespoon 1 cup cooked rice (optional) Simmer the turkey carcass with water, bay leaves, poultry season- ing and broth mix at least four hours or all day if you have time.
