Pick out the smallest potatoes and boil or steam them in their skin until they're just tender. Over- cooking gives them the mealiness that you want to avoid. As soon as they're cool enough to handle, pull off the skin and cube the potatoes into a bowl. Add, in any order, sliced radishes, finely chopped:-celery, finely chopped green onion or chives, lemon pepper, celery seed if you wish, and finally a good = spoonful of mayonnaise. With a spatula mix it all together without mashing-- each ingredient should keep its own character. More mayonnaise if it seems a bit dry. Do all this at least an hour before the meal, longer if you can manage. It does the salad good to marinate. But marinate it in the refrigerator--potato salad improperly stored is one of the prime causes of summer gastric problems.
