Prior to the arzival of Alborz on Mother’s Day 1999, the Ambleside area’s Caspian restaurant was the reigning house of fine Persian cuisine west of Taylor Way. Organic Cantaloupe ib. _2.18/ kg It remains to be seen whether the Persian approach to dining will sell way out west, but Alborz’s approach is grounded in quality — a key to cracking the finicky West Vancouver market. A Table Hopping admis- sion here: the subdeties of Iranian food had thus far escaped staff researchers. For the most part Persian culinary experiences have involved yards of Basmati rice and cords of kabobs. Throw into the mix Middle Eastern flat bread and satads of whole radishes, squares of feta cheese and heaps of parsley and you pretty well have it. It’s nat bad for one round, but it doesn’t do ine moves west much to inspire return visits. Further investigation, however, reveals that there’s much more to Persian cook- ery. And Alborz docs a good job of opening the door to its complexities. Named after a range of mountains in northern Iran thzt overlook the Caspian Sea, Alborz is the product of Ali Tabatabaci, Mohammad E. Namazi and his son Mohammad Reza Namazi.
