sion into the heart of
West Vancouver.

Prior to the arzival of
Alborz on Mother’s Day
1999, the Ambleside area’s
Caspian restaurant was the
reigning house of fine Persian
cuisine west of Taylor Way.

It remains to be seen
whether the Persian approach
to dining will sell way out
west, but Alborz’s approach
is grounded in quality — a
key to cracking the finicky
West Vancouver market.

sion here: the subdeties of
Iranian food had thus far
escaped staff researchers.

For the most part Persian
culinary experiences have
involved yards of Basmati rice
and cords of kabobs.

Throw into the mix
Middle Eastern flat bread and
satads of whole radishes,
squares of feta cheese and
heaps of parsley and you
pretty well have it.

Further investigation,
however, reveals that there’s
much more to Persian cook-
ery. And Alborz docs a good
job of opening the door to its
complexities.
