It’s been depressing to watch the effect of the GST driving irate Canadians to shop down south — even if the prices are no better. I heard the latest figures on job losses due to businesses closing and I wonder if anything will repair the damage. It’s discouraging to turn up at a small shop you’ve patronized for years to find it closed. Brian argues that many merchants abus- ed the GST — making extra prof- its by keeping the prices as they were instead of passing the reduc- tions on to the consumer. All I know is that by this time of year I’ve normally saved enough money to look after our pvoperty taxes. Not this year! I know that my spending pattern hasn’t changed but prices are ob- viously higher. , It irks me ta pay GST on pro- ducts such as Everfresh fruit drinks — pure fruit juice and water! If this isn’t ‘‘food’’, what is it? Do you mind explaining to my cats that they ought to eat 7% less because their food is costing 7% more? As for the price of cigarettes, it’s ludicrous. Now the customs are reporting huge increases in smuggling. Cigarettes are high on the list of preferred contraband. What in hell do they expect? Happy New Year! _ One effect of our crummy economy is known zs ‘‘cocoon- ing,’’ defined as spending more time at home. That’s good news for. families, although tough on the entertainment industry. ’ Pve noticed a big increase in readers phoning for inexpensive buffet suggestions — indicating that there is a lot of home enter- taining going on. Here are a few of the best recipes I discovered in 1991. Marlene’: Pumpkin Dessert This was' given to me by my friend Marlene Anderson. I prepared it for Thanksgiving and my family raved about it. Crust: . . 1 cup flour 1/2 cup regular rolled oats 1/2 cup brown sugar 1/2 cup soft butter Mix well. Press into a 13’°X 9” pan. Bake at 350° for 15 min. Filling: 2 cups canned pumpkin 1 13 2/2 oz. tin evaporated milk 2 eggs 3/4 cup sugar 1/2 teaspoon salt 1 teaspoon each: ginger, cloves, cinnamon. . Beat together and pour onto crust. Bake at 350° for 20 minutes. Topping: 1/2 cup chopped walnuts 1/2 cup brown sugar 2 tablespuons butter. Sprinkle over pumpkin mixture and bake 15-20 min. more. Fresh Fruit Orange Dip 4 medium eggs 3/3 cup butter or margarine 1/4 cup sugar 4 teaspoons grated orange rind pinch of salt 1/2 cup freshly squeezed orange juice Blend until smooth in blender. Place in the top of a double boiler over simmering water and _ stir constantly until thick. Cover and chill. Serve as a dip for fresh fruit. Fast Cherry Cheese Square Crust: 1 1/2 cups grahain cracker crumbs 3/4 cup brown sugar 1/2 cup melted butter Filling: 1 cup whipping cream 14 oz. package cream cheese 3/4 cup icing sugar Whip cream and set aside. Whip cheese with icing sugar. Fold in cream. Barbara McCreadie BUDGET BEATERS Topping: 1 - 19 oz. tin cherry pie filling Prepare crust, top with filling and spread with cherries. Chill at least two hours. Frozen Margarita Pie Crust: 1/2 cup plus two table- spoons margarine 1 1/4 cups finely crushed pretzels 1/2 cup sugar Melt margarine and stir in pretzel crumbs and sugar. Press into 9°’ pie plate, bringing the sides up to form a rim slightly above the plate. Chill in freezer. Filling: 1 tin Eagle Brand sweetened condensed milk — 14 oz 1 1/2 tablespoons fresh lime juice 1 1/2 tablespoons tequila 1 1/2 tablespoons Triple Sec (Both of these may be purchas- - ed in small bottles) Green food cvloring — I used about 6 drops 2 1/2 cups whipping cream, whipped Beat milk, lime juice and li- quors together. Add food color- ing, drop by drop until you fike the color. Fold mixture into whipped cream until blended. Pour into chilled crust. Freeze overnight. Well wrapped, this keeps for several weeks. To serve, thaw siightly —- about 15 minutes on the kitchen counter makes it easy to cut. . 1. garnished mine with lime twists.
