ROSSINGS IS fast approaching a fork in the dining road ahead, and it’s not from a wayward table setting. Timothy Renshaw TABLE HOPPING The restaurant opened in late 1987 with balloons, streamers, of- ficial speeches and mayoral rib- bon-cuttings. Its full name was the Pacific Orient Line Crossings Restaurant, and it came outfitted with a full sushi bar, an upstairs first-class cruise-ship dining motif and a lower-deck steerage-class light snacks bistro and bar. The vessel was proudly skip- pered by Peter lacus, former part- ner in Vancouver's Fresgo Inn. Culinary voyages departed daily from Crossings’ location at the en- trance to the North Shore SeaBus station. And those voyages continue to- day. But after almost five years of plying the often stormy waters of the local restaurant trade, Cross- ings is in need of a refit. The sushi bar, for example, was lost at sea in one of Crossings’ earlier voyages.
