Learn Mexican cooking CORN AND Mexican cooking will be the focus of acooking demonstra- tion at Lonsdale Quay Market this weekend. The demonstration, sponsored by Que Pasa, will illustrate the unique and creative use of corn in Mexican cuisine. Since Aztec times, corn has been cooked slowly in a water and lime mixture, and then ground on stones to muke a dough, called masa harina. In its liquid state, before being ground, the corn was used to make soups, stews, and even drinks. After grinding, the masa was shaped, stuffed or wrapped, to make certain types of fritters and tamales. Flattened into a disk, and cook- ed on a griddle, it became a tortilla and used as bread to lick up fri- joles (fried beans) or stuffed to make tacos or enchiladas. The people of Mexico even devised numerous ways to use the tortillas after they had gone stale, by using them to make casseroles, called chiliquiles, or deep frying them to make tortilla chips. Covered with melted cheese, these became the very popular ‘*nachos.” In the cooking demonstration, which takes place Saturday, Sept. 24 from 2 to 3 p.m., fresh masa will be made and then used to make tortillas. These in turn will be used to make tamales, tacos, enchiladas, and nachos as well as other dishes. Recipe cards, as weil as taste samples, will be available for those in attendance.
