Toss the chopped vegetables and
the whole garlic with the olive oil to
coat lightly. Phice all together in a
roasting pan. Bake in the oven, uncov-
ered, at 350°F (180°C) for about 30-
45 minutes. Drizzle the maple syrup
over vegetables, return to oven, and
roast 5-10 minutes longer.

Remove roasting pan from oven.

Transfer all vegetables to a soup pot. ”
