It announced on January 15 that the controversial Bovine Growth Hormone (rbst) will not be given to our dairy cattle. The. hormone is legal for use in the U.S.A and it can be marketed in the European Union. The BGH has not been proven disadvantageous for consumers, but is definitely not positive for dairy cattle. More than nine years of monitoring has discovered that the long- term impact is clear: increased risk of mastitis, infertility, and lameness. For humans, there doesn’t seem to be significant increased danger of antibiotic resistance, carcinogenic risk or allergic reaction. Health Canada says: “The safety of both human and animal health are critical con- siderations when assessing 3 new veterinary drug.” For Canadian consumers this decision must be consid- ered asa positive development. ‘Te is true that our dairy cattle will continue to produce about 10-15% less milk than their cousins in the U.S. Meanwhile, American dairy farmers and consumers are petitioning their FDA to have the licence of this synthetic hormone revoked. The manufacturer of the hor- - mone, Monsanto, is vigorously defending its product. Suffice to say that a lot more testing should be done before we allow synthetic materials to enter the food sup- ply. Let’s support our B.C. dairy farmers. Here are three recipes using milk — Canadian milk of course. Aimond Soup 1X Thsp. very finely chapped onions 2 Toe. butter fo 2 Tbsp. all-purpose flour 6. chicken stock (or canned chicken consomme) 2 ¢, peeled almonds, ground e in your kitchen % tsp. nutmeg, % tsp. mace salt and ground white pep- per to taste % to 1 cup 33% cream 2 egg yolks 1 tsp. grated lemon peel Method: Select a saucepan, melt the butter, add the onion and saute until glossy. Add the flour to make a roux. Add the chicken stock and simmer until smooth -—- about 5 minutes. Add the almonds and the spices, salt and ground white pepper to taste. Simmer 15 minutes, Mix together the egg yolks, lemon rind, and the cream. Add to the soup very slowly while whisking con- tantly. Do not boil. Check for favour and serve, garnish with a little chopped parsley, Serves This is a classic Spanish dessert recipe, a personal favourite, 1 Tesp. all-purpose flour Ke granulated sugar 3 egg yolks 1 Tbsp. butter (originally unsalted) vanilla concentrate to taste For the breading: 1 beaten egg 1 c. very fine white only bread crumbs canola oil for frying vanilla sugar for garnish Method: Mix into ¥ c. of milk the cornstarch, sugar and the flour. Place the rest of the milk into a double boiler with the vanills. Bring to boil. Take out about 6-7 Tbsp. and gently whisk into the three egg yolks. Pour into the cornstarch, whisking con- stant. Gentiy cook for 3 more minutes. Mix in the butter. Pour this mass into a 9°x9” sprayed pan. Cover and retrig- erate. When cold, cut into desired shapes -— hearts, dia- monds ete. Select a frying pan, add 14” of canola oil. Heat to 375F.
