There would be a veranda patio, gourmet spe- cialities, fresh fish, a top pastry chef and modern colours. - Waiters and waitresses would use the latest in computer ‘technology, and they would be crisply attired in the new green and white motif. A top graphic designer gave the restaurant a logo, a signature warthy of i its placein .. | ‘ history. 1 cringed. “Trendy tc restaurants, are to be avoided,” | said * to myself. But those first tumultuous months were excii- ing: There was banging and crashing and rattled nerves. Some new dishes won rave reviews and others are best forgotten. It was too much, too soon, the owners now say, ‘but gradually, a strange ching happened. For every nostal- gic:Peppi’s veteran who expressed dismay, four new peo- ple arrived. A younger, more energetic crowd. Now there were lunches, and teas and brunches and special events. . Within a very short time span, every business volume record in the 70-year history of the restaurant had been broken again and again. Magic, indeed. Yet Klaus Fuerniss was not satisfied with the product. There were great days, for sure, but too many lapses. He and his team searched for consistency and an even more - ings occur year round.
