Staff pile into the Table Hopping bus blindfolded, and Harris, our driver, takes us where his nose directs him. Our most recent outburst of spontaneity ted us, or led us via Harris, to Salute. Harris should get a raise. Salute, which opened in 1989, has developed into West Van- couver’s best, and possibly the North Shore's best, Italian restau- rant. : Its food is northern Italian, em- . bracing the elegance and vitality of ‘ good Italian food and reflecting . the passionate warmth of owner and head chef Gamal Hanna. The Egyptian-born Hanna learn- one of the N. TIMOTHY RENSHAW table hopping ed his culinary chops in the kitch- ens of Corsi Trattoria, where he presided so effectively as manager for 10 years before opening Salute. His restaurant’s food bears the authentic Italian trademark of Mario and Antonio Corsi, the owners and culinary powers behind both the Trattoria and Cafe Roma. But Salute and its food also reflect some of the qualities of its owner: its atmosphere is warm and colorful and its food is top quality and exuberantly delicious. And for fans of the full Italian dining experience, Salute’s wine list (bottles start at around $18) is exclusively Italian: Chiantis, Ruf- finos, Bollas, Barberas, Biancos, Shore’s best QUICK BITES APPETEZING * exuberant Italian cuisine * warm atmosphere * good italian wine list UNAPPETIZING + limited selection of wines by the glass * accasionally slow service Barolos, Barbarescos and other excellent examples of the great viticultural variety of Italy abound. My only quibble with the selec- tion is that Salute features only house wine by the glass, which rules out any educational sampling by the curious or any light tippling by those who might not want to spring for an entire bottle. In keeping with the spirit of the evening, Table Hopping spon- taneously splurged and ordered a 1986 Barbaresco Fontana Fredda ($32).
