Every culture has some sort of pastry and meat combination from Cornish pasties to pork buns at dim sum. They make a substantial meal, one that hungry kids appreciate on acold night. Many, especially turnovers, make a fine lunchbox addition. Cold pasties. were a tradition with the Cornish miners. ‘School kids in Argentina enjoy .. empanadas — much the same idea except a little spicier. ; My mother made meat pie and it was a treat. MY MOTHER’S MEAT PIE Pastry for a big twe-crust pie (use frozen or a mix if you like) 1% Ib. beefsteak, cut in 1” cubes 4 Tbsp. drippings (see? this is an OLD recipe) 2 tsp. salt Pepper . 2c. sliced onions 2. hot water 4 Tosp. flour (the recipe states “bread flour’’ but all-purpose is fine) 6 Thsp. water 1. Thsp. thick condiment sauce (HP for example) Brown beef in drippings in a deep skillet. Add salt, pepper, sliced onions and hot water. Cover and simmer two hours. Line a deep nine-inch pie plate with pastry. _ Remove meat from skillet and jay on pastry. Thicken the gravy with flour. and water, mixed to a smooth paste: Cool... Pour over meat and cover with a top crust. ; Flute the edges and cut steam vents in the top. Bake 10 minutes at 450°F then lower heat: to 350°F and bake 35 minutes longer. STEAK AND MUSHROOM PIE 1% ib. beef stew meat, cubed 1’” 3c. water ‘ 1 package cnion seup mix ¥Y% Wb. fresh mushrooms, sliced i Tbsp. butter Dash Worcestershire sauce Yc. ketchup Few drops gravy browning 6 Tbsp. flour Cold water Topping: 1 sheet frozen puff pastry, thawed and rolled out te fit baking dish, OR, Herb Top- ping (recipe follows) Do not brown meat. Place in a deep pot with lid. Add water and soup mix. Bring to a boil and simmer until very tender — about 1% hours. Saute mushreoms in butter. When the meat is tender, add mushrooms, seasonings and ftour mixed with enough cold water to make a smooth paste. Stir and cook until thick. Place in a 9°'x 13” baking dish.
