The Operatic Society has been performing at Centennial regularly since its first performance of Oklahoma in 1969 says Don Jabour, who plays a chorus member in the current production. The Mikado opens tomorrow night at Centennial Theatre and runs weekends until Feb. 23. Per- formances begin at 8 p.m. For tickets phone 987-5729. Salute recommended From 20 it was 4 wonderfully dry Italian red, full of subtle flavors and bear- ing the characteristics of fine winemaking. It accompanied homemzde Italian herb bread and a delicious ttalian-style tomato salsa. Outside were Harris, the Table Hopping bus and sub-zero temperatures; inside the smells of garlic, olive oi] and Parmesan cheese, the sounds of dining com- raderie and enthusiastic digestion. So why dally further? Maestro, the first dish! Minestra di Legumi ($4.95), a tich Italian vegetable soup, served piping hot and topped with freshly shredded Parmesan cheese, sprinkled from yon silver serving dish by our ever-attentive waiter. The soup has a rich, deep brown broth, redolent with garlic, beef and olive oil. It is filled with chunks of carrots, cauliflower, cabbage, zucchini, and red and green pepper. It chases away hunger and ex- ternal chills with a hearty hot pepper bite and vibrant vegetable flavors. We follow the soup with An- tipasto Freddo ($12.95 for two). The selection arrives on a large white oblong plate laden with ex- amples of Italian appetizer brilliance: crostini topped with Baby Mozzarella cheese, sweet sundried tomato, anchovy and marinated red pepper; shrimp and marinated artichoke hearts sprinkled with virgin olive oil and herbs; and thin quarter moons of cantaloupe wrapped in slices of fine Prosciutte ham. Simple and sublime. Our waiter apprises us of the progress of our entrees and fills depleted wine glasses. The restau- rant is full; the atmosphere buzzes. Calamari alla Napoletana ($6.95) is ordered to make up for the disappointment of Salute’s ex- cellent Cioppino being unavailable. The appetizer of sauteed baby squid is prepared in a hot-blooded tomato sauce that is rich in garlic, butter, and pepper. | sample a Scaloppine via Veneto ($16.95) from the Salute meat selection, while Harris hops on one foot outside to keep warm. The veal dish presents a colorful display of vegetables (snow peas, spaghetti squash, and delicious pan fried and herbed potatoes) ar- rayed around slices of veal. The meat, sliced delicatety thin, is topped with Proscuitto ham and melted Mozzarella cheese and a bright red tomato salsa. ft was a superb finaie. The beauty of spontaneity is its circumvention of expectation, Salute will surely tive up to most expectations and surpass the rest.
