Most are $4.95. Ah, but here’s the waiter. Dinner: Appetizers: Grilled veal and herb sausage ($4.95) fresh from the Robson public market and served with a subdued apple-pear chutney. This is a wonderful varia- tion on the all-teo-often monotone appetizing theme. The sausages are elegant with a slight spicy kick that does not leave you burping garlic for the next three days. Entrees: Wild Spring Salmon ($14.75). It came wrapped in pale green savoy cabbage and served with a sweet sorrel cream sauce that was visually enhanced with yellow, red and green peppers. Delicious and extremely moist. The Raintree illustrates the late Truman Capote’s gastronomically astute observation — that quality of vegetables separates the upper from lower dining classes — by providing each table with a wonderfully colorful, fresh and bright central dish of vegetables igenous to the Northwest Coast.
