Cornish hens take
the place of squab

And no one suffers through
I’ve been thinking about them and about how

When / was a girl, she said
sententiously, squab was the
fancy dish on the menu, and,
tike the game hens, was just
the right size for one person’s
dinner. But, unlike the game
hens, it put up a fight.

A long time ago I was be-
ing given dinner in a fancy
dining-room in New York.
When offered the menu,
some wild improbable yearn-
ing to be taken for one of the
cognescenti gripped me, I!
suppose, because | found
myself asking for ‘‘roast
squab’’.

I say ‘‘asked’’, because
ladies were not allowed to
order, in those days, but
quietly communicated their
desires to their (male) host,
who instructed the waiter. |
knew all about squab — my
brother kept pigeons, at our
bouse in the Bntish Colum-
bia bush, and my mother
cooked the young ones, the
squabs, in delicious pies. |
could handie squab.

Well, the darn thing came
on its own platter, under
glass, and just lay there. The
beautiful dining-room, full
of beautiful people who pro-
bably knew what to do with
the thing, became a cavern of
horror. Did | bring the entire
carcass on to my plate? Did |
use my dinner-knife to dis-
joint it? Did 1 pick the whole
thing up in my hands?

After that, someone in-
vented Cornish Game hens,
