Spinach Puff (Parsley and Egp Sauce) You'll need a= small, fairly shallow casscrale dish plus a larger one to set it in for the boil- ing water bath. | used a 6''X 8° Pyrex cake pan set in a 9'°X 33” Pyrex baking dish. 2 tablespoons margarine 2-3 green onions, chopped 3 big garlic cloves, crushed 1 package frozen chopped spinach, thawed and = drained (squeeze out as much water as you can) 1-250 mL carton whipping cream ¥% cup grated Parmesan cheese Salt and pepper (I used seasoning salt and freshly cracked pepper) 3 eges In a medium saucepan, melt the margarine and gently saute the onion and garlic until limp but not browned. Add everything cise but the eggs and cook, stirring until bubbly. Cool a bit (it’s easier to handle) and turn into blender. Buzz until pureed. Here’s an old favorite of mine ~~ an inexpensive beef-rice combo that will feed 6-8. Venezuelan Rice 1 Ib. lean ground beef 2 medium onions, chopped I green pepper, chopped 1 - 28 oz. tin tomatoes, including juice, cut up 1 tin consomme Ys cup sherry 2 teaspoons chili powder Salt and pepper 1 cup sliced black olives { cup uncooked regular rice 1} cup grated cheddar cheese In a large frying pan, cook meat, onions and peppers until meat is grey and vegetables limp. Break up the meat as it cooks. Stir in everything else except the cheese. Bring to a boil. Cover, if your pan will go in the oven — otherwise, turn into a big, lidded casserole dish. Bake 30 minutes at 375°F, Un- cover and top with cheese. Bake 15 minutes more. This is a great dish to bring to a potluck — everyone likes it, it’s big, filling and cheap.
