Oh, sure - the beaches, especially on the Mediterranean are lovely, the climate is superb, the historical spots memorable and the shopping unique - but the food! is little similarity between Spanish food and Mexican food. Spices. in —Spatn;—are—used—deheately- “enhancing rather than over- _powering the meal. For the best in fresh fruit, vegetables and fish, a Spanish farmers’ market is the place. Early in the morning you'll find the local restaurateurs haggling with the stall keepers before preparing the day's menus. Spain has left an indelible impression on the food that I cook for my family. Our favorite Spanish omelette has no relation to the local (Canadian) offering - you've tried it, I'm sure - plain omelette with a gluey sauce of tomatoes, onions, peppers and Tabasco. The authentic version has only potatoes, onions and eggs and is often served cold as part of a picnic lunch. To prepare, allow two or three eggs per person. The dressing is aiways olive oil and vinegar often spiced with garlic and basil. The crowning touch to a Spanish meal is Paella, pronounced Pie - Asia. Probably their national! dish, there are as many recipes for it as there are housewives. Basically saffron-flavored rice with chicken, seafood and ham added, you can add or subtract ingredients as you go along. Salt and pepper for dredging Dredge the chicken thighs in flour and brown well in hot oil. Add the sausage and cook until hot and lightly browned, adding the onions and garlic part way through. Add tomatoes, water, bouillon cubes, oregano, rice and saffron. Bring to a boil, cover and cook on low heat for 20-25 minutes, until chicken is done and rice is tender. Add peas, shrimp and — clams.
