There is certainly noth- ing wrong with dining out, especially if the reason behind it is to avoid the pain associat- ed with preparing a meal. But for those not too beat with day-to-day life to cook, here’s one of three recipes in this issue of Flavors of Vancouver supplied by some of the best tastebud pieasers on the North Shore. Of course, if it becomes too much, paying a visit to the restaurant 1s not out of the question either. This one comes from Edgemont Village’s Cafe Norte. DUNGENESS CRAB & REDPEPPER CHOWDER Ingredients: 125 mL butter 375 mL red pepper, 4” dice 125 mL white flour 2 L natural *scafood stock, double strength 5 L ground black pepper 500 mL whipping cream 250 mL sour cream 5-7 mL sea salt, (to taste) 375 mL potatoes, X” dice *shells from crab are used for stock Garnish: 1 dungeness crab, cooked & shelled 125 mi. fresh parsley, minced 125 ml. red pepper, minced Method: In food processor, finely mince the 375 mL red pepper. Tn large soup por, melt butter over medium-high heat. Turn down to a low simmer and cover pot. Simmer for 30 minutes, stirring occasionally. In mixing bowl, whisk together the whipping cream and sour cream. Whisk in 500 mL hort stock. Whisk this mixture back into soup pot slowly. Blanch the potatoes in boiling water for three minutes only. Add the potatoes to the soup pot. Simmer for ten mere minutes. For garnish, chop crab meat roughly. Mix together with parsley and red pepper. Ladle soup into bowls. Heap three spoonfuls of crub mixture in centre of bowl.
