Salmon House management has decided to put to public tastebuds the controversy of farmed salmon versus wild salmon. During September, the restau- rant’s menu is featuring over a dozen different salmon-based items ranging from Farm-raised Salmon en Papillote ($16.95) to Wild Salmon in Grape Vine leaves ($15.95) to Smoked Salmon Cheesecake ($4.50) and Smoked Salmon and Avocado Ice Cream ($3.75). All are designed fo test argu- ments for and against farmed and wild salmon, and perhaps settle, once and for all, the culinary side of the controversy. The salmon-based dessert items could end up testing the outer limits of the dessert field. The Salmon House, which was recently sold by Nintendo Enter- tainment to Toseki Entertainment, is also distributing fact sheets on both farmed and wild salmon and asking customers to fill in their salmon preferences on a survey. Survey respondents will be eli- gible to win a weekend fishing trip for two. In an unrelated matter, the Salmon House is helping to orga- nize a Sept. 22 benefit auction for the physically disabled. The event is scheduled to take place at Vancouver's Science World starting at 7:30 p.m., and TIMOTHY RENSHAW: table hopping the first recipient of the funds rais- ed at the auction will be Darryl Won. The Salmon House sous chef was left a quadriplegic following an April 1990 car accident. Won is- highly regarded in the local restaurant industry, and his misfor- tune has inspired the entire res- taurant community to rally to his support. Thirty of Vancouver's best res- taurants will be hosting the Fan- tasy Food 2000 benefit for Won. Organizers hope to raise $100,000. The B.C. Paraplegic Foundation has established a Fantasy Food 2000 Trust Fund, and all funds raised by the project this year will be placed in the trust to benefit anyone in the restaurant-food in- dustry who sustains a disabling in- jury in the future.
