N.Y. beckons Lumiere chef IN English, Lumiere means light, or enlighten- ment. Some might think it a cocky moniker for a restaurant — especially when chosen by the chef/ow ner of the establish- ment. Bur when the chef in question has been dubbed a Canadian culinary star by critics; his food said to be responsi- ble for legions of diners raving and swooning; and his work credited with lighting up the restaurant scene of the entire country ... well, maybe he has a right to be cocky. Robert Feenie opened Lumiere on West Broadway four Years ago, and ever since he’s been raking in recognition, awards and accolades like cherry blossoms in the spring. In March, Lumiere was named Best Restaurant in Vancouver Magasine’s Restaurant Awards for the third year running. But minus the spotlight, Feenie and Lumiere are about one thing: the food. And it’s because of the food that The Jomes Beard Foundation — headquartered in a New York City brownstone where foodies, the press and the general public ‘gather regularly to savour the accomplish- ments of chefs from around the world — welcomed Feenic last week for an encore, over-sold, performance. Before pack- ing up his recipes and cargo of wild B.C. sockeye salmon, Quebec foie gras and Qualicum Bay scallops, along with case- loads of B.C. wine (which he says always surprise the New Yorkers), he did a test-run of the menu on a mini-audience in his restaurant. For the James Beard menu —- along with the tasting menus he offers in the restaurant — the seven courses are smal]. Not crushing in volume and flavour, they leave room for surprise, and for pleasure. Feenie looks at everything when he creates a Culture * dish. Texture is the focus when Chinese five-spice duck con- somme gets poured over foie gras torchon resting on vegeta- bles. The broth is light, but intenscly flavoured, the foie gras melts and the vegetables are crunchy. Contrasting flavours come into play when he combines the salmon, cured in salt, sugar and.lemon rind, with satisfying potato gnocchi. A gold- en stack of scallops on green pea ravioli make a perfect pic- *. ture; and the pancetta-wrepped rabbit loin with cous cous is warm and salty. “..” For the Beard menu, sommelier Neil Ingram matched each ‘course thoughtfully, with a small dose of wit. With the con- ~ somme, he chose the 1998 No. 3 from Vancouver Island’s ~ .
