turkey

TURKEYS MUST be handled
safely at Christmas time to prevent
a foodborne illness called salm-
onella.

The number of reported cases of
salmonella in Canada has inereas-
ed from over 7,000 in 1985 to
almost 10,000 in 1986.

Salmonella symptoms include
abdominal paii:. fever, diarrhea,
nausea and vemiting and occur
within six to 75 hours of eating af-
fected food.

The following procedures can
help prevent salmonella:
© Proper Handwashing

Always wash hands with hot,
soapy water before handling the
turkey. Make sure that utensils and
cutting boards are clean.
® Defrosiing

Defrost the turkey in a sink fill-
ed with cold water, or in the
refrigerator. Never defrost at room
temperature, because the outside
layer of the turkey becomes warm,
allowing bacteria to multiply.
* Stuffing

Stuffing can be hazardous. Place
the stuffing in the turkey just be-
fore roasting. Once the turkey is
cooked, the stuffing should be
removed immediately.
® Cooking

Cook the turkey at 160C (325F)
until the internal temperature of
the breast or thigh is 85C (185F).
Turkey is usually done when the
meat throughout is no longer pink.

Refrigerate leftover turkey im-
mediately at 4C (40F) or lower.
When reheating leftover turkey,
the temperature throughout must
be -70C (165F) or greater.
