Oven investing tips IF YOU'VE decided to remodel your kitchen and at the same time replace, and perhaps even upgrade your wall oven, then you may be surprised by what you find. Aside from initial prepara- uion and actually placing the food inside, today’s ovens are designed with many features which take the guesswork and work out of cooking. Before you even begin to shop, however, take the time to evaluate what you like and dislike about your present oven along with your day-to- day cooking habits, family and entertainment needs. If, over the years you've become a cook sold on the convenience of ‘‘instant’’ foods, frozen entrees or take- out foods, then a single oven may be all that you need, unless of course, yoru budget allows for a combination microwave, single oven. But if you’re a cook who likes to bake and entertains trequently, you might con- sider sacrificing a cabinet to accommodate a double oven As you look at the many brands and models available, you'll find that certain features are standard on most ovens, including automatic time baking, timers for short- term cooking, interior oven lights, indicator lights, see- through oven windows and electric models. Ovens differ in the way they fine-tune some of these basic features and the ‘‘step- up’’ features offered on high end models. If you tend to broil versus fry many foods in order to control your calorie intake, then an oven with a variable broil feature should be of in- terest (O yOu. Many ovens are designed to broil only at full power or approximately SS50°F. But with variable broiling, you can broil fish at 3S0°F and not be disappointed with the results. As you shop, take a good look inside each oven and note that not all bro! elements are the same size. A broil element with six passes, or turns, will provide more, even heat and consequently do a better job of cooking large food loads, such as a tray full of hamburgers, than a smaller four pass element which will leave foods posi- ignition for gas tioned along the outside underdone Traditionally, ovens have been designed for broiling with the oven door open, but this allows smoke and heat to escape into the kitchen One manufacturer has designed their ovens to allow vou to broil with the door closed through the use of a Suspending a A PAPER CLIP. This special system works during all high heat baking, broiling and cleaning, eating away at smoke and greasy vapors, before returning clean, dry air to the room. Of added value is the fact that it also eliminates the need to vent the oven to the Outside, as some ovens re- quire, adding cost and in- convenience to installation. A feature that is probably new tO Many consumers 1s Retained Heat cooking—a special optional method of cooking. It’s available on cer- tain models in the new built- in oven line recently in- troduced by KitchenAid. It can be described as cooking with the heat turned off, using the residual heat left in the food and oven cavity to complete the cook- ing process. Essentially, Retained Heat cooking 1s the same as time baking except that the temperature 1s set 100 degrees higher than the temperature normally selected and = the cooking time cut in half. At the end of the Retained Heat portion of the cvcle, a Keep Warm thermostat kicks in tO maintain the temperature inside the oven at 16SOF.
