BACK TO SCHOOL Miake lunches the kids will eat THOUGHT I'd be happy to see our two youngest back to school - but that was before | got touched for the new wardrobes and school supplies. Touched? I took a survey among the teens that have been in and out of our house_all sum- mer: ‘‘What do~you most often throw away from your brown bag?’’ Answer: ap- ples and oranges. AS a former teacher I recall seeing hundreds of half-eaten lunches tossed away and it made me boil. With my own kids I refuse to prepare lun- ches - they’re on their own. | provide the foods they re- quest - never my own sugges- tions. If they ask for something | know they’ll eat it. By the way - the favorite with all the kids | polled for sandwich filling is deli meat - assorted varieties. It may be expensive but it’s never wasted. They also told me _ that they'll always throw away anything sticky or messy to eat - too embarrassing in front of their friends. Buns are preferred to bread for sandwiches. They hate any milk based drink because they get too warm by noon. Tinned juices are favored because they taste OK when warm. Anyway, with that in mind, don’t miss the Town House 156 mi tins of apple juice at 6/$1 at Safeway this week. A couple of cases will see you through a lot of lunches. Bananas are school lunch favorite. Safeways has them at 4 Ibs/$1 this week - the lowest they’ve been for some time. If your kids are like mine they’ll only eat green bananas another which leads to a lot of banana bread made to use up the ripe ones. I’ve streamlined my favorite recipe - stir all the dry ingredients & nuts together in a bowl. Toss all the wet stuff - eggs, milk, oil and bananas in the blender and buzz for a few seconds. T. with a mixture of one cup flour, “% cup butter and % cup brown sugar. Bake alongside anything else you’re baking till apples are done. Top with vanilla ice cream or whipped cream. Look for Robin Hood angel food cakes at Super Valu for $1.98. If you’ve got a crowd coming for dinner try this: Angel Food Waldorf: Slice the top “% from a baked, cooled angel food cake. Prepare a tunnel in the rest of the cake, leaving about 1’’ on the bottom and sides. Give the scraps to the thinnest member of the fami- ly to snack on - not you! Whip together 3 cups whipp- ing cream, 1% cups icing sugar, % cup cocoa (dry, unsweetened) and % tea- spoon of salt. Fill the tunnel with the cream mixture. Replace the top of cake and frost the whole thing with the cream. Cover the top with toasted sliced almonds. Chill well and serve to 14 people. This can be frozen. Two excellent buys at Buy Low this week: Lean ground beef at $1.78 a pound and green peppers at 37¢ a pound. My kids love stuffed green peppers. Combine cooked lean beef, diced onion (sauteed with the beef), cooked rice, cooked chopped spinach (opt.) and _ tinned tomato sauce in any propor- tion you like. Remove tops and seeds from green peppers and drop into boiling water for 2 minutes. Chill with cold water and drain well. Fill with the meat mix. 1 bag these individually - we never make a meal out of them but they’re most popular after school snack. The girls defrost and then heat them in the microwave with grated cheese (cheddar or Parmesan) on top for the last few minutes. Green peppers become outrageously high pyiced in the winter so if you’re smart you'll dice and bag a lot of them for use in spaghefti sauce and _ casseroles this winter. They can be frozen without blanching. Bag them in One-cup portions. McCain orange juice, 122 oz tins, frozen is just 99¢ at Woodward's this week. With the kids heading off early in the morning we’ll using a lot of juice at breakfast. Another good buy: Large eggs are just $1.27 at Wood- wards.
