By KIM PEMBERTON News Reporter The course, called Appreciation and Sensory Evaluation of Wine, begins Wednesday, Sept. 24, and will be taught by North Vancouver resident Edward Appleby. By the end of the six sessions, students will have tasted at least 50 wines, said Appleby, a graduate of the Lewis Hotel School and member of the International Socie- ty of Wine Educators. “‘My motto is wine is fun and let us keep it that way,”’ said Ap- pleby. “It shouldn’t be a mystery to anyone. The four senses would come into operation — touch, taste, smell and sight. Smell is very im- portant because smell arouses the appetite,”’ he said. Appleby said the course should appeal to anyone wishing more knowledge about wines and stu- dents must be at least 19 years of age. \ “It also appeals to a lot of younger people — waiters and waitresses who have not had the kind of training they should have and who want to know more about the product,” he said. Appleby said the general rule that white wine is suitable for white meat and fish and red wine is suitable for red meats is not always true. He said a meal of turkey with a spicy dressing would suit a light, red wine, for example. “It should be a happy marriage of wine and food. Appleby said there is still room in the course, which will be limited to 25 students. It will be held every Wednesday from 7 to 10 p.m., and costs $105.
