But if you'd like to be toasting the arrival of 1985 with your own champagne, you must start now. We cannot give you a 28-day champagne — but we can show you how to make a great champagne in 28 weeks. So, making bubbly that will be ready by Xmas is out of the question if you wait until August. We have scheduled our first champagne-making class for May 17th. Classes will be scheduled every Thurs. and/or Fri. evening as long as the response warrants and full classes are booked — or until the end of June, whichever comes first. We do request that you have a basic knowledge of winemaking and are Satisfied with your previous endeavours. The process is reasonably sophisticated and this class will not suit the beginning or first-time winemaker. Classes require pre-registration with a $5.00 reservation fee (refundable on attendance), so don’t miss this opportunity!
