Many of my favorite standbys started life in the pages of some publication. However, by the time I get through with them they often bear little resemblance to the original. This week {ve my share of guests so | spent a few hours get- ting my Jarder filled. Have | got some winners for you! This first recipe is adapted from an old recipe in Good Housckeep- ing magazine. The ingredients are unchanged but the method of preparation is streamlined. It is so quick to make when you make use of your blender. I served it for dinner on Thurs- day night — there were nine of us, including guests from Halifax and Los Angeles. Zucchini Cake with Sour Cream Frosting 2% cups flour 1% cups sugar 2 teaspoons baking soda Ys teaspoon salt 2 teaspoon cinnamon V4 teaspoon nutmeg 4 teaspoon cloves Ya cup milk 2-3 small zucchini (approximately) Y cup regular margarine or shortening, softened 2 egys 1% cups chopped walnuts Sour Cream Frosting (recipe follows) Stir ail the dry ingredients together (except walnuts) in a large mang bowl Measure milk inte blender. On low speed, begin adding chunks of succnima until level reaches 2 cups (haus why the amount of zucchini is itty). Stir in walnuts, Turn into a sprayed 13°°X 9" metal baking pan and bake at 350°F. 30 to 35 minutes or untiba toothpick in the centre comes out clean, Cool and ice with: Sour Cream Frosting This is one of those satisfying mixtures that turns out perfectly — easily spreadable and very creamy.
