When I was growing up, three
of my closest friends were first-
generation Canadian. Back in
those days (my kids figure that to
be somewhere near the Middle
Ages) the only ‘‘ethnic’’ restau-
rants in town served Chinese and
Canadian food — mostly the latter
and not very well.

However, we hud a much better
food choice than the average
Prairie kids — at our friend’s
kitchen tables. Cecelia’s mom
dished up Greek, Elsie’s mom
served up German and Rosie's
mom filled us up with Hungarian.
At our house they got Nova Sco-
tian which almost qualified for
**foreign food.”

This recipe comes very close to
Rosie’s mom's goulash.

Hungarian Goulash
2 Ibs. stewing beef
1 package onion soup mix
2% cups water
2 cups fresh tomato chunks,
peeled
3 tablespoons tomato paste
2 teaspoons suzar
’ 2 tablespoons Worcestershire
sauce
1 tablespoons paprika
1 teaspoon caraway seeds
Y% cup flour
¥ cup.water
small carton dairy sour cream
- In.a deep pot with lid, combine
meat, soup. mix and. water. Sim-
amer, covereduntil meat is very
«tender, about twe hours.

Add tomatoes and cook until

tender. Add next: five. ingredients.

Combine flour with water. to make’
a smooth paste and stir ‘into the.
goulash . until thickened. Reduce.
