Delicious and healthful, this recipe for Christmas corn scones can be served with breakfast, lunch or supper. Christmas Corn Scones 2% cups (625 mi) all-purpose flour 4 tsp. (20 mi) baking powder ¥2 tsp. (2 ml) salt ¥ tsp. (2 ml) dry mustard 1 thsp. (15 mi) dried parsley flakes 1 cup (250 mi) grated Cheddar cheese, divided Y: cup (125 ml) margarine or but- ter 1 can (10 o2./284 mi) cream style corm Legg 1 thsp. (25 ml) milk (optional) In a medium bowl, combine flour, baking powder, salt, dry mustard and parsley. Set aside 2 tbsp. (25 mi) of Cheddar cheese for garnish, if desire.!, Add remaining cheese to Windson¢ the tlour mixture along with mar- garine ocr butter cut into large pieces. With two knives or pastry blender, cut margarine or butter into flour, until size of peas. Mix corn and egg together in another bowl; add to flour mix- ture. Mix until well moistened. Tum out onto floured board; knead 10 to 12 times or until not Sticky. Roll or pat dough to 44-inch (1 cm) thickness. Use large floured biscuit or cookie cutters in star, Christmas tree, snowman or round shapes to cut out scones. Place on greased baking sheet. Knead scraps together and re-cut; repeating until all dough is used. Brush tops with milk, if desired. Sprinkle with reserved Cheddar cheese. Bake in 425°F (220°C) oven for about 15 minutes or until golden. Serve warm. Yield: about 12 scones. ». Beginning Jan. 10, students will be able to study the scientific prin- ciples behind topical issues such as water quality, acid rain and the ozone layer on Tuesday and Thursday evenings from 6:30 to 9:30 p.m. The cowse also covers other major environmental concerns such as species extinctions, air pollution and waste ma:\agement. A lab component of three hours per week will augment topics discussed in class. Biology 105 is a university trans- fer program for non-science ma- jors.
