Nothing warms up winter quite the way a warm drink, a roaring fire and some home-made gifts do. Here are some of the herbal treats recently presented at the Waterfront - Centre Hotel’s From a City Chef's Garden herbal dinner series by executive chef Daryle Ryo Nagata and clinical herbalist Elaine Stevens. Ginger Tea Fresh Ginger root, pceled and sliced thinl yo Fresh lemons, halved and squeezed Honey Put a quart of water into a large pot and add prepared ginger root, using at least one inch of root per cup of water. Cover the pot, bring to a boil and simmer for at least 20 minutes. The longer you simmer it, the’ more concentrated it becomes, Halve lemons and squeeze the -juice out of them. Put the leon halves into the pot and simmer for a further ten minutes or so to extract the oils out of the lemon skins. Add lemon juice and honey to the tea, te tasic, and serve. — Elaine Stevens Rosemary and Thyme Shortbread Cookies 3 Tbsp. unsalted butter 1% Tbsp. fine granular sugar % c. all- poet tote yme (freshly chopped) i ie. rosemary (freshi ly ¢ P ) % tsp. flower petals (fresh Cream the burter and sugar together Herb play Getting crafty for Christmas with a wooden spoon or electric mixer until smooth. Slowly add in the flour, herbs and flower petals. Mix until con- sistency allows the ability to form a small bali. Roll out the ball to 4 to % inch thick. Cut out desired shapes. Bake on non-stick paper or pan at 325° for 15-20 minutes or until slightly brown. Cool and dust with sugar and serve. ~— Daryle Ryo Nagata Herbal Vincgar “Boitles of herbal vinegar are valuable additions to the kitchen, and they allow you to enjoy the taste and medicinal properties of fresh herbs year round. One of the best vinegars to use as a base is organic apple cider vinegar. It helps to regulate the acid /alkaline balance in the body, and is an excellent tonic for the digestive tract.” — Elaine Stevens Raspberry Vinegar Fill a stone crock pot (or glass jar) with fresh (or frozen} raspberries. Heat apple cider vinegar to a simmer point and pour over the raspberries until they are just covered. Cover the crock pot well and leave it ro sit in a warm place for ene or two weeks. Ar the end of that time, strain the liquid from the exhausted berries. The raspberry vinegar can be used at this point for salad dressings. Caiming Potpourri “Another excellent gift is a home- made potpourri made from calming, relaxing herbs that promote a quiet sleep. This mixure can be placed in a bowl in the bedroom or used to fill a smail piliow that can go near the sleeper’s head.” — Elaine Stevens 2 <. rose petals 2 &. rosemary flowers and leaves (said to dispel nightmares) 2c. lavender flowers (to dispel melan- choly) 1 c. chamomile flowers (to soothe the nerves) 2 Tosp. marjoram: (to act as a seda- tive) 1/2 Tbsp. aniseed (for scent) 1/2 Tbsp. powdered orris root 6 drops essential oil of lavender In large glass bowl add the essential oil to the orris root and mix well with a wooden or plastic spoon. Add all the other ingredients. Mix again. Pour the mixture into an airtight glass jar and let it sit in a cool dark place for four to six weeks while the fragrance mellows. Shake occasionally. When ready to use, arrange in an attractive bowl! or use to fill a small pillow as above. TOSS the foil, the cooking spray and the fattening grease. .
