FOOD Faulty freezer causes budget chaos [I'M OFTEN asked how I find the material for the two weekly columns. After all, I’ve been writing for 15 years and you'd think the well might run dry. Some- times it does. But requests from readers, as well as suggestions from personal friends (recipes, too) keep me going. “What can you re-freeze when your freezer has packed in?’’ was a recent call from a reader — who also referred to me as a ‘‘young lady” which made my day. As long as anything is partially frozen, it may be re-frozen. How- ever, a loss of quality is for sure. Freezing expands the liquids in foods, bursting cells. Thawing draws out this liquid, along with flavor. Re-freezing doesn’t im- prove the taste. Now, from a safety angle, any- thing that is completely thawed but still very cold may be cooked and re-frozen. Cooked meats have a shorter storage life — fig- ure three months maximum. Vegetables thaw more quickly than a large roast. They re-freeze poorly. Buying a big package of any herb or spice is a mistake. The shelf life of most is six months. After that they lose flavor or take on objectionable tastes.
