I thought that I must have been blessed with a bad lot (or else I’ve been fooling myself that I can cook), but it seems that many people have the same problems. Complaints include food stick- ing and burning (even boiled potatoes, for heaven’s sake), hot handles (advertised as ‘‘stay cool’’), multitudes of cleaning problems and their weight. The large saucepans, when filled with food, are wrist-breakers. The only word of praise | heard is that they save money on Saran wrap in the microwave because of their glass lids. That was tempered by the fact that my reader’s oven is the turntable variety and the han- dle on her pot is tricky to place so it doesn’t hit the sides. Keep forwarding your com- plaints and let’s see if Corning is listening. | can’t believe that com- pany could test a product and overlook so many obvious flaws. by Barbara McCreadie It’s that time of year again — for those of us who like to bake our own Christmas cakes and puddings. Several years ago, I printed a recipe for a very special dark fruitcake. : The recipe originated with my kid’s great-grandmother and it is beyond a doubt the best-flavored fruitcake I’ve ever tasted. With . proper aging, it slices beautifully and it would also make a splendid . wedding cake. Just a few hints before you begin: . *Grease your pans and line with heavy brown paper. I use cut-up supermarket bags. *Soak your fruit in brandy overnight or even longer at room temperature. Be sure to use a glass or stainless steel pot — I use a big steel Dutch oven. *Have someone on hand with wrists like a wrestler to mix the batter with the fruit. *And, if you do something stupid like I did as a new bride — | left out the spices and didn’t real- ize it until the cakes were in the oven, all is not lost. Wait until the cakes are baked and then mix the spices with a good shot of brandy. Inject drops of the mixture at in- tervals into the cakes with your turkey baster. We couldn’t notice any difference. *After your cakes have cooled, brush them with a bit of brandy. Wrap tightly in foil and then place in plastic bags. Every week or so, carefully unwrap the cakes and re-baste with brandy. Have a little shot yourself and hum a chorus of your favorite carol. Don’t -even look at your unfinished gift list. ~ Great-Grandmother Oidershaw's Fruitcake Fruit: 2 pounds Muscat raisins (dark, sticky ones, Sun-Rype, blue box) 1 Ib. peel Y Ib. blanched almonds (leave whole or slice) 1 tb. sultanas 2 cups currants ¥% cup brandy Batter: 1 Ib. butter (or margarine) 22 cups brown sugar 3 eggs" VY, teaspoon soda 1 teaspoon salt 1 teaspoon baking powder 1 teaspoon cloves 1 teaspoon cinnamon Y2 teaspoon allspice The night before, prepare fruit. Break up the Muscats and watch for any stems. Pour brandy over and mix well. Keep covered and stir from time to time during the For batter, sift dry ingredients. Beat butter and brown sugar until light and fluffy. Beat in about % of the flour mixture. Then add four of the eggs. Then half the remaining flour, beating well after each addition. Add the remaining eggs, then the rest of the flour. Stir fruit again and then mix in the batter. This makes enough to fill two extra large bread tins or two regu- lar loaf pans plus a 6”* wide, deep top as the cake rises very little. Bake very slowly — 250°F ap- proximately 4 hours. This time will vary with the size of the tins. One year | tried doubling this recipe and | would caution against it. I never saw such a mess in my life.
