42 - Wednesday, September 12. 1990 ~ North Shore News ‘Try new recipes to use up prolific zucchini crops From paze 41 Zucchini Bread 3 eggs 1% cups brown sugar % cup cooking oil 2 teaspoons vanilla 3 cups flour 1 teaspoon each: baking powder, baking soda, salt Vs teaspoon cinnamon 1% cups raisins, soaked in: Ys cup sherry ¥2 cup walnuts 2 cups grated zucchini Beat eggs with brown sugar un- til fluffy. Beat in olf and vanilla. Combine dry ingredients and stir in. Add soaked raisins, walnuts and zucchini. Turn into two regular loaf pans. Bake at 325°, | hour or until test toothpick comes out clean. This freezes well. Make extra for Christmas - a dandy hostess gift. ae Still have too many zucchini? | discovered the joys of ratatouille when we lived in Spain for a month. It is wonderful for adding to homemade soup. If you have tomatoes going ugly on the vines and a lot of zucchini, put this together and freeze it. In November, you'll be glad you did. Ratatouille 5 medium tomatoes, pected and seeded (see below) 3 zucchini - about 2 cups, cubed 1 eggplant, diced lcup diced @aion 3 tablespoons fiour 3 teaspoons chicken bouillon mix (Chicken in a Mug) 2 teaspoons mixed dry italian herhs ‘a teaspoon garlic powder a litde cold water Combine vegetables in a large saucepan. Over flow heat simmer until tender in their own juices. Stir flour together with the re- maining dry ingredients. Add water to make a soupy paste and wisk until smooth. Stir into vegetables and cook until the mix- ture is thick. Package in one cup lots — each serves two as a vegetable dish or makes one pot of soup with broth and other vegetables. each: sugar, salt. eke To peel tomatoes: Cut out core. Drop tomatoes into boiling water for a few seconds and scoop out with a slotted spoon. Drop into cold water. The skins will rub off. Squeeze out the seeds through the -hole you made when you took out the core or blossom end. If you have a gas stove, you can get the same results by spearing cach tomato and rotating it in the cen- tre of the flame. eae It shouldn't surprise you — all our daughters have pussycats- Tiggy the Terrible (he is Janine’s joy but house-wrecks in his spare time), Lori’s Mr. Frisky (one of the sweetest cats I've ever known but his wandering across 23rd might do him in) and Chesley, Suzy’'s litde calico. The big problem all of my daughters have faced this year is fleas. | don’t know why but our Miss Bea Proud, Resident four — Timmy, Emily, Cricket and Misty are nearly flea-free. So far, nothing is jumping in) my house. Two of the girls spent a lot of money in vet bills for flea baths, and fumigation. Both hired the North Shore Pest Control to clear out their houses and recommend the service.
